Ingredients

1 cup uncooked brown rice

1 boneless pork chop or boneless pork rib, cut up

4 eggs, beaten with a little milk and salt

Cooked ham, diced

2 green onions, chopped

Bacon bits

Soy sauce, to taste

1 ½ cups frozen peas

1 cup cooked carrot, cubed (optional)

Directions

Cook the rice, frying it in a little butter or oil before adding the water. Scramble the egg in a large frying pan and set aside. In the large frying pan, cook the pork with soy or teriyaki sauce until cooked through. Add the green onion and ham to brown a bit. When rice is cooked and tender, add it and the peas to the frying pan with the pork and green onion, and let fry for about 10 minutes, stirring occasionally. Add soy sauce to taste. Add the egg and continue frying until the egg is warmed through.

This fried rice recipe is simple and makes a complete meal as long as you load it with lots of meat and veggies.
